This coffee comes from Sul de Minas, one of Brazil’s most traditional coffee-growing regions, known for its high-altitude plantations, rich red soils, and temperate climate that contribute to naturally balanced and sweet beans. The variety is 100% Arabica, carefully selected as a single origin to preserve its natural flavor characteristics. The beans are processed naturally, allowing the cherry to dry slowly on raised beds under the sun, which enhances sweetness, body, and fruity nuances.
After harvest, the green coffee beans are aged in freshly emptied bourbon barrels from Kentucky, USA. This barrel-aging method leverages the hygroscopic properties of green coffee — the beans naturally absorb volatile aromatic compounds from the oak staves and the barrel’s residual bourbon congeners. This controlled adsorption and micro-oxidation imparts complex layers of flavor: raisins, baked apple, smoky oak, winey esters, and subtle bourbon-inspired notes.
Important: No alcohol is added, and roasted coffee is entirely alcohol-free. The flavors result from the beans’ interaction with the barrel environment rather than any spirits.
