Huehuetenango is one of Guatemala’s most celebrated coffee regions, located in the highlands near the Mexican border. Its mineral-rich volcanic soils, warm dry winds, and cool mountain nights create the ideal terroir for slow cherry maturation, resulting in beans with dense structure, natural sweetness, and vibrant fruit acidity.
The varieties Bourbon, Caturra, and Typica bring the classic Guatemalan flavor profile of chocolate and fruit, supported by balance and complexity.
After washed processing and sun-drying, the green beans undergo an additional ageing stage in fresh oak bourbon barrels from Kentucky. Thanks to their porous, hygroscopic structure, the beans absorb volatile aromatic compounds from the oak staves and residual bourbon esters.
The outcome is a coffee with layered aromatic depth, where the origin’s classic notes (maple, orange, milk chocolate) intertwine with raisin, baked apple, smoky oak, and winey bourbon-like tones.
Important: this coffee contains no alcohol — the ageing process imparts only aromatic complexity, with no use of spirits during production.
